The Pastry-Free “Pie”

Pastry-Free Pie

I believe food combining is the best everyday diet for optimum health and weight loss. However, if you do food combine – or don’t mix your proteins and starches – you might miss a few old favourites: pizzas, fish and chips, bacon sandwiches…and pies.

Happily, I can help with the pies, as I’ve devised a pastry-free alternative.

As this recipe is classed as protein based, you can add any neutral or protein filling. I have chosen vegetables – as I have a small allotment and a ready supply – plus a tasty “sauce”! If you are short of time, frozen veggies are fine.

Ingredients (Serves three-four)
Five cups of any of the following:
Carrots, peas, sprouts, cauliflower, broccoli, swede, parsnip, green beans
One tub of hummus – plain or flavoured
Cheddar cheese
Mixed herbs
Black pepper

Method
1. Boil a kettle full of water
2. Put the vegetables in a large pan, plus a few pinches of mixed herbs, cover with the hot water and heat up on the stove
3. Pre-heat the oven to 180°C (fan assisted), 350°F, Gas Mark 4
4. Slice or grate the cheddar cheese while bringing the mixture to the boil
5. Remove from the heat and drain well
6. Return the mixture to the empty pan and gently fold in the tub of hummus with a spatula
7. Add the contents to a large oven-proof dish and spread evenly
8. Completely cover the mixture with the cheese and add some black pepper
9. Place the dish in the middle of the oven and bake for around 20 minutes or until the cheese turns golden brown and crispy
10. Remove from the oven and allow to cool
11. Serve on its own or as an addition to meat, fish or salad
12. Enjoy!
