Cauliflower Cheese

You don’t have to be a vegetarian or a food combiner to love cauliflower cheese. The fact that this nutritious dish can be eaten by both is a bonus!

Cauliflower Cheese

It can also be eaten alone, as a starter, or as an accompaniment in a protein main course

Preparation time: 10 minutes before cooking
Cooking time: 20 minutes
Serves: 2

Ingredients:
1 small cauliflower
2oz/55g Cheddar cheese
2 small onions
1 small leek
Double cream
Extra virgin olive oil
Filtered water
Sea salt and black pepper

Method:
1. Cut the cauliflower into florets, chop up the onions and leek, and grate the cheese
2. Heat up a tablespoon of olive oil in a large pan on a low heat and sauté the onions and leeks until tender
3. Add the cauliflower and a tablespoon of filtered water. Put the lid on and simmer for about ten minutes or until tender. Stir to prevent sticking
4. Add the cheese, two tablespoons of double cream, a little sea salt and some pepper
5. Stir for another minute and then serve
